‘Seafood Chef Extraordinaire!’  With his creative roots firmly grounded in advertising as a former Art Director, Chef Bruce spent a decade as Pro Cook/Culinary Adventurer/Restaurateur and African Food Guide. He knows no boundaries and takes everything culinary way beyond its limits. His whirlwind spiral to the top of his game has left its mark on the ‘Food scene‘ south of the equator.

The incredible journey started north; firstly as an apprentice at The London Ritz followed by the Lanesborough on Hyde Park corner, then down the road to Petrus with Marcus Weiring and Gordon Ramsey and finally finishing of his International “Schooling” with Chef Anton Mossiman OBE at the Belfry in Belgravia.  South Africa called; Head Chef of Boulders Lodge Singita, Executive Chef of the magnificent Cape Grace, opening the world acclaimed restaurant ‘one.waterfront’ with immediate acknowledgement as a Culinary Leader.

His very own, ‘theshowroom’ restaurant took all top awards and set the benchmark for modern South African hospitality and design, followed on with the sister ship, ‘the showroom’ Café and The Quarter.  Bespoke ‘Gourmet Touring’ and ‘Hosting’ throughout Africa were the final step forward towards his current exciting venture ‘Table d’Hôte’ from his own home.  The Boat House opened in Scarborough in 2012 and in 2013, opened it’s doors to over 2 161 guests.  Chef Bruce cooked and plated over 10 801 plates of extraordinary seafood.  His new gourmet home, The Flagship will continue to delight foodies from all corners of the globe.

His maverick antics and unique style of ‘cuisine’ have paved the way for the younger generation to follow in showcasing what our incredible yet fragile ocean has to offer.
